FAMOUS FAMILY RECIPE SERIES
RECIPE # 31 LULA’S PERSIMMON PUDDING
This was a favorite family dessert especially in the fall when persimmons were ripe. The persimmons were also pulped and stored frozen for future cookies and pudding.
Ingredients:
1 cup Flour
1 cup Sugar
1/2 teaspoon Cinnamon
1/4 teaspoon Salt
2 teaspoons Baking Soda
1/2 cup Milk
1 cup pulped ripe Persimmons
1 tablespoon Melted Butter
1/2 cup Raisins or Dates
1/2 teaspoon Vanilla
1/2 cup chopped Nuts
Instructions:
Sift all the dry ingredients together, except the Soda. Dissolve the Soda in the Milk. Stir Milk mixture into the dry ingredients. . Add the Persimmon pulp and Butter. Mix well. Add Raisins or Dates, Vanilla and Nuts. Bake in a greased casserole or loaf pan for 1 hour at 300 degrees. Serve with Hard Sauce or Brown (Caramel) Sauce. This is a good keeper and may be frozen.

HARD SAUCE
1 cup powdered sugar
1/4 cup butter, softened
2 teaspoons hot water
1 teaspoon Vanilla
Combine all ingredients in a small bowl and beat until smooth and blended (consistency of sour cream).
This pairs well with Hot Coffee, Iced Tea, Iced Water or Orange or Lime Green Kool-Aid.
