RECIPE # 14 FRIED POTATO SANDWICH
Among the Famous Family Recipes, this is one of my favorites. I have fondly eaten these sandwiches since I was a little kid.
Potatoes (Russet or New Red)
Bread of choice
White Onion thinly sliced
Hot Sauce (optional)
Salt and Black pepper
Thoroughly wash and thinly slice desired number of potatoes leaving the peeling on. In an iron skillet heat enough vegetable oil for frying the potatoes. Add the Potatoes to the hot oil and Salt and Pepper them. When the Potatoes are about halfway done add the onions and continue frying, turning occasionally until well browned. With a spatula transfer the cooked potatoes into a bowl lined with paper towels to absorb the oil.
Spread Yellow Mustard on Bread of choice and add desired amount of Potatoes. Add Hot Sauce if desired and add additional Black Pepper.
Pairs well with Fried Okra, Pinto Beans, Black Eyed Peas, Sauerkraut and Wennies, and Buttermilk or Iced Tea.
Nutrition: Primarily the food groups of Potatoes and Bread, Mustard and Onions.
