These are light melt in your mouth sugar cookies. Can’t eat just one.
Ingredients:
1 cup Powered Sugar
1 cup Granulated Sugar
1 cup Margarine or Butter softened
1 cup Vegetable Oil
2 Eggs room temperature
4 Cups All Purpose Flour
1 teaspoon Cream of Tartar
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Vanilla
In a large mixing bowl, cream the Sugars, Butter, Oil, and Eggs until fluffy. Add Vanilla.
Mix Dry ingredients and add to Sugar mixture.
Chill dough about an hour.
Roll into 1-inch balls and flatten in palm of hand and place on ungreased cookie sheet. Flip both sides of cookie in small bowl of granulated sugar.
The cookies spread out while cooking. Don’t crowd them on cookie sheet.
Bake at 375 degrees for about 14 minutes. Cool on rack.
Makes approximately 40 cookies. Enough for two people 3 times.
(This dough can be kept in the refrigerator for several days and baked as needed.)
Covers the food groups of Sugar, Butter and Flour.
Pairs well with Cuban Coffee, other lesser coffees, milk, Hot Chocolate, Grape or Orange Kool-Aid or 7-Up.
