RECIPE #29 FUDGE SHEET CAKE

This old family cake favorite brings back many fond memories. As the name implies it is a cake that is baked on a greased sheet pan (12”x18”).

Ingredients:

1 cube (1/2 cup or 8 tablespoons) of Butter
1 Cup Water
1/2 Cup Vegetable Oil

Boil these three ingredients and let them cool.

Sift together:
2 cups of All-purpose Flour
2 cups Sugar
6 tablespoons Hersey’s Cocoa
1 teaspoon Baking Soda
1/2 Teaspoon Salt

Stir the dry ingredients together and add the cooled mixture.
To this add:
1/2 cup Buttermilk
2 Eggs,
1 teaspoon Vanilla
Beat all the ingredients together at medium speed for 2 minutes.

Bake at 375 degrees for 20 minutes.

BOILED CHOCOLATE ICING FOR SHEET CAKE

1 1/2 Cups Sugar
6 Tablespoons Butter
6 Tablespoons Milk
6 Tablespoons Hersey’s Cocoa
Boil 1 minute. Cool slightly and add 1 Teaspoon Vanilla
Spread on top the Sheet Cake.

This cake pairs well with home made Vanilla Ice Cream, after a meal of Fried Cabbage, Corn on the Cob, Black-Eyed Peas and Cornbread.
