RECIPE #20 LULA’S STRAWBERRY SHORTCAKE
“Lula never did write the recipe down. She just told me how and I watched her make it a 100 times. I’ve never heard a complaint. I’ve never heard a complaint about Lula’s either and she never had any left over.” Caroline
Ingredients:
2 cups all purpose flour
2 1/4 tsp. baking powder
1/4 tsp. baking soda
2 tablespoons Sugar
3/4 tsp. salt
1/3 cup softened Butter
1 Cup Buttermilk
Mix dry ingredients together. Cut in the butter until mixed. Add the Buttermilk. Pat out into 2 round cake pans, sprinkle lightly with sugar and bake 15 minutes or until they begin to turn brown.
Allow to cool. Split each cake in half horizontally (that means side-ways – not up and down). Place a cake layer in a large bowl and a cup of sweetened strawberries and do the same with the remaining cake layers and strawberries.
Strawberry Filling:
6 Baskets Ripe Strawberries rinsed, drained and sliced
1Cup Sugar
Mix together and let stand at room temperature for at least an hour.
Dish into serving bowls and add a dollop (gob) of Whipped Cream.
