RECIPE #23 CHIPPED BEEF AND GRAVY
Chipped Beef from a Jar and Gravy over Biscuits. (Thanks to my friend Leroy for reminding me about this treasure of a recipe). We were seldom without a jar of Chipped Beef in the cupboard when I was growing up. This is what it is: “Chipped beef is a form of pressed, salted and dried beef that has been sliced into thin pieces. Some makers smoke the dried beef for more flavor. The modern product consists of small, thin, flexible leaves of partially dried beef, generally sold compressed together in jars or flat in plastic packets.” (Wikipedia) It was in little jars that became juice/drinking glasses when I was a mean little kid.
Ingredients:
1 Jar Chipped Beef (2.5 oz. Jar)
Skillet of White Gravy

Directions:
Chop the contents of a Jar of paper-thin slices of Chipped Beef into Half Inch Squares. Put the Chipped Beef into a Thickened White Gravy. Once the Chipped Beef and the Gravy are married (that’s what they say in the fancy-dancy hody-tody recipes now… no really they do). Or, just make sure they are mixed together and heated all the way through real good.
Prepare the Famous Family Biscuits and split them in half and ladle or spoon the Chipped Beef Gravy over the Biscuits. Oh, my!
Pairs well with Fried Potatoes or Fried Okra, Dill Pickles, Pickled Beets, Sweet Tea and Diet A&W Root Beer.
