RECIPE #6 FRIED PIES
This favorite recipe goes back a long way in the Famous Recipes. It is a special pastry mixed and rolled out about tortilla size and filled with various fruit fillings apricot (my favorite), apple, berry, pear, peach, cherry and I have eaten raisin.
Fried Pie Pastry (Lula’s Recipe)
5 cups flour
1 large can evaporated milk
1 cup Crisco shortening
1 tsp. Baking Powder
2 tsps. Sugar
1 tsp. Salt
1 tsp. White Vinegar
In a large bowl stir dry ingredients together. Blend in shortening with pastry blender. Add Evaporated Milk and Vinegar. Mix all ingredients until it forms a large ball. Store in refrigerator.
The Fruit:
1/4 cup (1/2 stick) of butter
1/4 cup granulated sugar
2-3 Granny Smith Apples, peeled, cored and chopped
Brown Sugar and Cinnamon (or whatever fruit)
1 tablespoon Brown Sugar
1/2 tsp. Ground Cinnamon
For the fruit, melt the butter and sugar together; add chopped apples and simmer covered, over medium heat for about 15 to 20 minutes. Remove from heat, sprinkle brown sugar, and cinnamon over the apples, stir, taste and adjust sweetness. Set aside to cool.
(Most fruits are prepared in a similar way.)
Roll out pastry to 6-7” circle for each pie. Put 4-5 Tablespoons of filling on the pastry and fold over and seal edge of pastry making a half-moon shaped Pie. Fry in Crisco oil until Golden Brown on both sides. Put on cooling rack and sprinkle lightly with granulated sugar.
Nutrition is most of the food groups: wheat, milk, fruit, sugar and spices.
Makes 10-12 Fried pies, or 2 servings. O.K… maybe 3 servings.
