BISCUITS AND GRAVY
RECIPE #3 BISCUITS
2 cups flour
3 teaspoons baking powder
? teaspoon salt
? teaspoon soda
1/3 cup shortening
1 cup buttermilk (or add 1 tbsp. of white vinegar in 1 cup whole milk and let it set for 30 minutes and you have buttermilk)
In a large bowl combine flour, baking powder, soda and salt together. Cut shortening into mixture until it begins to look like cornmeal.
Make a well in flour mixture and add milk into the middle. Stir until mixed. Turn out on lightly floured surface and knead a few times. Pat dough into a circle of desired thickness, cut with biscuit cutter and place separately on pan. (Optional: brush top with melted butter before baking.)
Bake at 450 degrees for approximately 14 minutes until browned. Makes about 10 biscuits or 2 servings.
Nutritional value: Both biscuits and white gravy are really good for you. They meet standards for 2 or 3 food groups: bread, milk and gravy… I think.
