RECIPE # 16 VIENNA SAUSAGE SANDWICHES
Vienna Sausage is another one of the wonderful several meats-in-one-meat available for many uses. They come is a little can with seven little sausages per can. They are about the size of your little finger. They can be sliced in half long ways (the sausages, not your finger) and made into a sandwich or made into a Pigs-in-a-Blanket. They may be fried or used raw.
Ingredients for Sandwich:
1 can Vienna Sausages
Bread of Choice
Yellow Mustard
Iceberg Lettuce
White Onions thinly sliced (optional)
Hot Sauce (optional)
Black Pepper
Pigs-in-a-Blanket:
Use normal biscuits or use a roll of cardboard biscuits in a cardboard tube. Into a single flattened biscuit place a Vienna Sausage, add Black Pepper and wrap and surround sausage with the uncooked biscuit. Place Pigs-in-a-Blanket in Toaster Oven and cook 16-20 minutes or until golden brown. Little Piggies can be dipped in mustard, ketchup, hot sauce, and I have even seen them dipped in mayonnaise. (No, really I have.) Or they can also be served with White Gravy or Cheese Sauce.
Both the Sandwich and the Pigs-in-a-Blanket pair well with Alka Seltzer, Pinto Beans and Collard Greens.
